Back to School! | Mock Green Eggs, No Ham Breakfast

Although summer is gone and school has started, the fun can still continue. Why not try this creative and super quick breakfast idea with your school-aged children. You will need a ripe avocado. Avocados may not be unfamiliar to your kids. Guacamole is a popular snack food served with tortilla chips these days. So you will not have a hassle convincing your offspring into consuming an avocado. It will not be strange to them. They may be used to this green food.
Avocados which have fiber and 2 grams of protein can lower cholesterol due to its high content of monounsaturated fat. They have no cholesterol and are higher in potassium than a banana. Wow! Mom and Dad, you may wish to eat this breakfast along with your children because of the health benefits. Avocados also have B6, Vitamin C, magnesium, and iron. Select a ripe avocado that is dark in color that you can squeeze a bit. Use a sprouted bread. I like Ezekiel 4:9 Sprouted Grain Bread. It is flourless. Add a whole apple to the breakfast for more fiber. Did you know that apples can boost alertness due to the high boron content! This is great for school and for adults. Adults can skip morning coffee!
- 1 ripe avocado
- Smoked paprika with a dash of salt substitute or sea salt, to taste
- Touch of cayenne pepper (optional because kids may not like the heat)
- 1 slice of sprouted bread
- 7 fresh blueberries
- 1 cherry tomato
- Toast sprouted bread.
- Remove hard, large seed from avocado.
- Scoop out avocado meat, discard skin, and place in a food processor or into a bowl.
- Add smoked paprika with a touch of salt substitute or sea salt
- Add cayenne pepper (optional)
- Puree avocado in a food processor until smooth or mash until smooth with a fork in a bowl.
- Spread avocado mixture onto toast.
- Create a fun clown face with blueberries and slice a cherry tomato in half for a nose.
YIELD: One avocado provides 2 servings. Can toast two slices of sprouted bread for 2 breakfast servings.
